Kosambari (Legume salad)

This is a very easy raw salad usually made with raw pulses (split legumes) or sprouts mixed with grated carrots or chopped cucumber and seasoned with salt and mustard seeds. Sometimes a hint of lemon juice is added for that extra kick. Usually it is served as a side dish with bisibele bath, lemon rice etc. It is a very refreshing salad and makes a great snack all by itself. It is a karnataka specialty.


Moong dal/urad dal-1/4 cup
Carrot shredded-2 tbsp
Green chillies-1 chopped fine
Lemon juice-few drops
Coriander leaves-  to garnish
Salt

Wash and soak the dal in water until soft (atleast 30 mins). drain off the water completely. mix it with carrots, green chillies, coriander leaves, lemon juice and salt. Enjoy!


Tips:
1. You can season it with mutsard seeds, curry leaves and dry red chillies.
2. Use sprouts in place of dals.
3. Add in chopped cucumber to this.
