Candied Balls

Who does not like candies? A few out there must be rolling your eyes and saying we do not. Wait! how about a healthier version? To be more precise, pick up something healthy and make it into a candy. That is exactly what I have brought to you for this Easter. Candied pumpkin seed balls. It is a recipe adapted from food network magazine.

Pumpkin seeds or Pepita as they are called in Spanish is a popular ingredient of Mexican cuisine. When salted and roasted, they make a delicious snack. I like to munch on them every now and then. They are very high in nutrition and a good source of protein, tryptophan, as well as iron, zinc, manganese, magnesium, phosphorus, copper and potassium. It's oil is used as salad dressing. They are known to be good for anxiety disorders, prostrate ailments irritable bowel syndrome etc.

Candied pumpkin seeds is sinful way of enjoying these munchies. Moreover with just a few ingredients you will have a healthy snack at your fingertips. So try this simple candy at home today. Your kids will love you for it. Of course you won’t be able to resist the either. What are you waiting for? Grab a bag of pumpkin seeds and give this a try. 

Sugar-1 cup
Lemon juice-2 tbsp
Pumpkin seeds-3 ½ cups

Roast the seeds for a while. I spread them out on a parchment paper and put it in the oven for 10 mins (it was switched off after baking the cake). Give it a shake in between.Mix sugar with lemon juice in a wide thick bottomed pan. Heat the mixture on medium for approximately 7 mins (until bubbly). Switch of the heat and mix in butter followed by the pumpkin seeds. Using an oiled spoon scoop out and shape them as you like (you need to hurry here as they tend to solidify once it cools). Spread them on oiled parchment paper to cool.

1. You could use a mixture of pumpkin seeds, and a variety of 
    nuts. Or replace with sunflower seeds.
2. You could add a tiny bit of essence and spices to give it that extra kick
