Fried chicken

Nothing tastes good when recovering from sickness. It’s the time when I crave for mom-made comfort food. I wanted something spicy but yet comforting to awaken my sense of taste.  I came up with this simple recipe that left me with a happy tingling in my taste buds.


Chicken drumsticks-4
Turmeric powder-1tsp
Chili powder- ½ tsp
Pepper powder- 3 tsp
Salt
Coconut oil-1 tsp
Cumin seeds-1tsp
Ginger chopped fine-1 tsp
Curry leaves- 1 sprig
Coconut milk-3 tbsp
Coconut grated-2 tbsp


Make slits on the chicken drumstick and marinate it with turmeric, chili, pepper powders and salt. Keep it aside for half an hour. Cook the chicken drumsticks in a covered pan. Once done remove it onto a plate. To the same pan add coconut oil and splutter the cumin seeds. Then add curry leaves and ginger and fry for a few minutes. Now add chicken and fry until well browned. Finally add coconut milk and grated coconut. Keep stirring until it dries up and coconut is browned.

Tips:

1. Adjust chili and pepper powders according to your taste.
2. You can use Garam masala and coriander powders in the
    marinade.
3. Chopped coconut pieces can be used in place of grated 
    coconut.
4. Amount of oil can be increased.
5. Coconut milk is optional.
