Rasmalai is a milk based dessert from east India. It is a very delicious dish comprised of flattened balls of India cheese (paneer) soaked in thickened milk flavored with spices. This is one of the many cheesy dishes that I favor most. Rasmalai is very close to my heart as it was my dad’s favorite. I will forever miss making it for him. I made this on the occasion of the second anniversary of my blog.

This simple dish is very easy to put together if you are ready to spare a little of your precious time. Hope you enjoy it.

Milk-8 cups
Lemon juice/vinegar-4 tbsp
Ice cubes-as needed

Milk 4 cups
Sugar-1 cup
Cardamom powder-1tsp
Orange powder-1tsp

Water-6 cups

Pista/almonds sliced
Saffron strands

Boil 8 cups of milk. Add the lemon juice and switch of the stove. Immediately add the ice cubes to stop the curdling process. Strain the curdled milk or paneer through a fine muslin cloth. Wring out the water and hang it to remove excess water.

While it is draining, boil 4 cups of milk with continuous stirring for 20 mins until it thickens. Add the sugar and flavor with a hint of cardamom and orange powder.

Bring water to a rolling boil. Add sugar and cardamom. Press the muslin cloth with the cheese in a thick towel and knead at the same time. Make medium sized balls and flatten between your hands. Drop them into the boiling water and cook for around 10 mins. Remove them with a slotted spoon onto a deep dish. Pour the thickened milk and garnish with sliced nuts and saffron strands.

1. You can use ricotta cheese instead of 
curdling the milk.

2. Softness of the cheese lies in how soon you stop the curdling process. It 
    becomes harder if the process is not stopped once it has been initiated.
3. Rubbing it between a thick towel ensures that all moisture is removed.
