Crème brûlée

Crème brûlée which means burnt cream is a very delicious dessert. It is thought to have originated in France. It is a custard based dish flavored with vanilla.  Sometimes it is flavored with lime or orange zest too. Orange zest flavor is the best. The first time I had it was after a 3 course meal. I went back to the restaurant two days later just for this dessert. I just love the creamy base with the caramelized sugar topping.

Here I recreated it adding raspberries and blueberries to the custard. Hope you enjoy it.

Handful of raspberries and blue berries
Egg yolks-2 (chilled)
Heavy whipping cream-½ cup
Condensed milk-4 tbsp
Orange zest-1 tsp
Granulated sugar-2 tbsp

Beat the egg yolks. Whisk in orange zest, condensed milk and whipping cream. Preheat oven to 325 F. Layer the ramekin dish with the berries and pour the whisked mixture. Place the dishes in a water bath (previously simmered on stove). The dish should be immersed at least halfway in the water bath. Place it in the oven and bake for 50 mins or until it jiggles when shaken. Remove from the oven and leave it in the water bath till it cools. Then refrigerate it for 3 hrs.

Sprinkle the granulated sugar on top and broil it in the preheated oven until sugar bubbles (Usually its done using a hand held blow torch). Let stand 5 mins before serving. It could also be served cold.


1. Replace berries with cherry, black 
currants or fruit of your choice.
2. It will take 45-60 mins to bake depending on the size of the dish
3. You could refrigerate it for up to 3 days before caramelizing.
