Turkey egg special breakfast (Huevos Rancheros)

Have you ever seen or tasted turkey eggs before?  They are seldom found in the markets because of the great demand for turkey meat. I was thrilled to get a whole bunch of Turkey eggs as a gift from my professor. These are bigger than chicken eggs, white to cream colored with brown speckles covering the entire shell. One egg is almost equivalent to two chicken eggs. The shell is very hard to break. But I should say they are more flavorful than the chicken eggs. 

 I wanted the dish to be something different where the egg would stand out on its own and at the same time, could mingle with other ingredients to give whole different flavor. That was how the idea of Huevos Rancheros came up.

Huevos rancheros is a very popular classic Mexican dish. This dish is very easy to make and its perfect for breakfast. Traditionally it consists of fried eggs served upon lightly fried corn tortillas topped with a tomato-chilli sauce. As the popularity of the dish spread beyond Mexico, there are several variations to this dish.

My recipe here is very simple. I have used homemade chapathi in place of tortilla. Thank you Stacia and David for the eggs.  Here is the recipe…Hope you will also enjoy it.

Turkey eggs


Chapathi-2
Turkey eggs-2
Onion-1/4 chopped
Tomato-2 chopped
Garlic-2 cloves chopped
Green chillies (Serrano peppers)-chopped to taste
Chilli powder- a pinch
Oil-2tsp
Salt
Coriander leaves-chopped for garnish

Heat 1 tsp oil in a frying pan. Add tomatoes, onion, garlic, green chillies and chilli powder. Fry  a couple of mins and then simmer for 10 mins.

In the meantime heat another pan, brush with oil. Gently fry the eggs sunny side up. Take care not to overcook or cook upside of eggs.

Lay out one toasted chapathi on each plate. Place one fried egg on top of it and cover it with cooked mixture from other pan. As the topping is hot, it will partially cook the top of the eggs. Garnish with coriander leaves. That’s it….Enjoy!

Tips:

1.You can use homemade/store bought tortilla in place of chapathi.
2.For the topping you can also use homemade/storebought salsa or guacamole
3.You could use two eggs for each plate
4.To make it more healthy replace tortilla/chapathi with lettuce leaves
5.You could add several topping like sliced avocados, cheese or anything of your choice
