Raisin Scones

Scones are small quick bread of Scottish origin. It is usually had for breakfast topped with jam, cream or maple syrup. It can also be a good accompaniment for tea/Coffee. They can be cooked on the girdle or baked. Traditionally they are round or triangle. It could be sweet or savory.

I came across this for the first time when we were in France. There was a bakery very close to our apartment. We were frequent visitors there as we loved their freshly baked baguette. They used to bake scones every Fridays. I saw this cute crispy cake like thing being taken out from the oven. They smelled divine. We ordered a couple of them with a cup of coffee. Mmmmm……we became instant fans.  If you have not tried them yet, try this out. I am sure you will not be sorry.

  
Preparation time-20 mins
Baking time-15 mins

Maida/All purpose flour-1 cup
Sugar-1/4 cup
Baking powder-1/2 tsp
Salt-1 pinch
Butter-1/4 cup
Milk-1/3 cup
Egg white-1 beaten
Vanilla extract-1/2 tsp
Raisins-3/4 cup
Egg yolk-1 beaten

Pre-heat the oven to 400 F.

Combine Maida, sugar, baking powder and salt. Sift well. Add in butter and mix until coarse and crumbly. Mix milk, egg white and vanilla extract and add them to dry ingredients. Stir until moist. Now mix in raisins. Combine well.

Roll them out to 3/4th inch thick. Using the cookie cutter cut them into desired shapes. Place on a baking sheet or parchment paper. Brush the tops with egg yolk. Bake till golden. It took around 15 mins for me.
Tips:
  •  U can substitute half of the butter with peanut butter and half of milk with Sour cream
