Sweet Bun

Bun is a small  bread, which are usually hand sized and dome shaped with a flat bottom.  Basically its made with flour, sugar, milk, yeast, and butter. They are super soft and delicious with a hot cup of tea. It can be sweet or savory, plain or with fillings.  

My love affair with these cute buns started when I was in my residential school. Every Sundays we were served with these buns just out of the oven along with evening tea and banana. By mid afternoon we could smell its delicious aroma from our dormitories which was on opposite side of the road. Then it would be a struggle to keep still until teatime. This recipe is a very simple. I bake them every week and use them for sandwiches and as dinner rolls. They may be had as such or with Nutella, jam or cream.

All purpose flour/Maida-2 cups
Whole wheat flour-1/2 cup
Yeast-2 ½ tsp
Butter-1/4 cup (or half stick)
Sugar-1/3 cup
Milk-2/3 cup
Water-1/2 cup
Flax seeds-2 tsp

Keep one cup of the flour aside. Mix and sift the remaining flours along with yeast. Combine milk, water, butter, sugar and salt and heat until lukewarm. Pour this into the sifted flours. Mix until smooth. Add more flour as needed and make smooth dough. Put the dough on a floured surface Keep it covered for 30 mins.

Shape them into small balls and arrange them on a baking tray lined with parchment paper. Remember to keep them well spaced. Keep them covered until doubled in size. Brush the tops with water or egg whites. Sprinkle flax seeds. Bake them in a 400 F preheated oven for 15 mins.


1. You could replace flax seeds with sesame or hemp seeds.
2. You can use All purpose flour/Maida alone. 
3. The dough will be sticky. As far as possible do not add extra flour. it will reduce the 
    softness/fluffiness of the bun....instead oil your hands to handle the dough.

നാട്ടിലെ bun കഴിക്കാന്‍ കൊതി വന്നിട്ട് ലേശം നാള്‍ ആയി. ഇത്ര simple ആണ് ഇത് ഉണ്ടാക്കാന്‍ എന്ന് കല്യാണിക്കുട്ടി ക്ക് ഒരു പിടീം ഇല്ലായിരുന്നു. ഇനി രക്ഷയില്ല.... കല്യാണിക്കുട്ടി ഇത് ഉണ്ടാക്കിയിരിക്കും :)
